- 2 large eggs
- ½ cup buttermilk (or regular milk)
- ½ cup vegetable oil (for frying)
Directions
Step 1: Prepare the Tomatoes
- Slice the green tomatoes into ¼-inch thick rounds.
- Sprinkle with salt and black pepper and let sit for 5-10 minutes to draw out moisture. Pat dry with a paper towel.
Step 2: Set Up the Breading Station
- In the first bowl, place flour.
- In the second bowl, whisk together eggs and buttermilk.
- In the third bowl, mix cornmeal, breadcrumbs, paprika, garlic powder, and cayenne pepper.
Step 3: Bread the Tomatoes
- Dip each tomato slice into the flour, then into the egg mixture, and finally coat with the cornmeal-breadcrumb mixture, pressing lightly to adhere.
Step 4: Fry the Tomatoes
- Heat vegetable oil in a skillet over medium-high heat (about 350°F/175°C).
- Fry the tomatoes in batches for 2-3 minutes per side, or until golden brown and crispy.
- Remove and place on a paper towel-lined plate to drain excess oil.
