Here’s the recipe for Spicy Pickled Garlic Cloves
Ingredients:
- 3 cups garlic cloves, peeled
- 2 cups white vinegar
- 1 cup water
- 2 tbsp sugar
- 1 tbsp salt
- 1–2 tsp red pepper flakes (adjust to spice level)
- 4–5 sprigs fresh rosemary (or dill, optional)
- 1 tsp whole black peppercorns
Instructions:
- Prepare the Garlic
Peel the garlic cloves and blanch them in boiling water for 1 minute. Drain and set aside. - Make the Brine
In a saucepan, combine vinegar, water, sugar, and salt. Bring to a simmer, stirring until sugar and salt dissolve. - Pack the Jars
In sterilized glass jars, layer garlic cloves, rosemary (or dill), red pepper flakes, and peppercorns. - Add the Brine
Pour the hot brine over the garlic until fully covered, leaving about ½ inch of headspace. - Seal & Store
Wipe rims, seal jars with lids, and let cool. Store in the refrigerator for at least 1 week before eating for the best flavor.
