Ingredients:

  • 4 cups cucumbers, sliced or chopped
  • 1 small red chili (or ½ tsp red pepper flakes)
  • 3 cloves garlic, minced
  • ½ cup white vinegar
  • ½ cup apple cider vinegar
  • ½ cup water
  • ½ cup sugar (adjust to taste)
  • 1 tbsp salt
  • 1 tsp mustard seeds
  • 1 tsp black peppercorns
  • 1 tbsp fresh dill, chopped

Instructions:

  1. Wash and slice cucumbers into bite-sized pieces.
  2. In a saucepan, combine vinegar, water, sugar, and salt. Heat until sugar dissolves.
  3. Add mustard seeds, peppercorns, garlic, chili, and dill to the hot brine. Stir well.
  4. Place cucumbers into a clean jar and pour the hot brine over them, covering completely.
  5. Let cool to room temperature, then seal with a lid.
  6. Refrigerate for at least 24 hours before eating for the best flavor.

Storage: Keeps up to 2 weeks in the refrigerator.
